Our Creamed Wildflower honey may differ in fragrance and flavour from harvest to harvest. The exact composition depends on the kind of pollen favoured by the bees during the season. It's something that our beekeepers never interfere with.

Raw honey is typically runny at harvest and crystallises with time. The process usually takes from a few weeks to even several months. Creaming through moderately intense and timely stirring of fresh honey at a low temperature creates a, rather unique, soft butter or thick cream-like texture. The process of creaming, when carried out properly, prevents raw honey from becoming solid and hard, while preserving its full original biological, enzymatic and nutritional properties.

Think of Wildflower Honey as a cocktail of different flower contents, rather than the produce of a single, distinct source. In order to be classed as Raw Wildflower Honey, the results need to bottled and sold as they were first obtained from a beehive, without being treated, preserved or pasteurised. You'll notice the difference when you buy Raw Wildflower Honey over a traditional supermarket squeeze bottle.
