Our Raw, Unpasteurised Buckwheat Honey has a strong, very distinct, flavour and fragrance. It is often described as resembling the barn, or simply, country environment. We like to compare it to blue cheese- it's an acquired taste appreciated by raw honey connoisseurs around the world.
Raw honey is typically runny at harvest and crystallises with time. The process usually takes from a few weeks to even several months. Creaming through moderately intense and timely stirring of fresh honey at a low temperature creates a, rather unique, soft butter or thick cream-like texture. The process of creaming, when carried out properly, prevents raw honey from becoming solid and hard, while preserving its full original biological, enzymatic and nutritional properties.
Buckwheat honey has a higher concentration of protein, minerals and natural acids, than other comparable honeys. It also contains less water and is a powerhouse of antioxidants. The deep and rich quantity of flavonoids and other phenol compounds are the source of such beneficial antioxidants, which fight off the free radicals. Whilst other foodstuffs contain high amounts of antioxidants, such as tomatoes and other fruit and vegetables, they do not compare with the levels found in raw unpasteurised buckwheat honey.

Store at room temperature in a dark and dry place. Always use clean and dry utensils to obtain honey from the jar.
